The Cacao Experience

the Cccao experience, david One thing that I’ve gotten into in the past several months is raw chocolate or cacao pronounced Ka(cow)- yes, identical to our dearly beloved friends who produce for us in plentiful supply our daily servings of milk! Cacao is the nut from which all chocolate is made; so however you eat your chocolate in whatever form from whatever source whether it be a mars bar a snickers or something of higher quality like sacred heart or green&blacks it all comes from the cacao bean.

This bean which is botanically classified as a nut comes from the fruit of the cacao tree and is known as theobroma cacao; the literal translation of which being: food of the gods! Unfortunately by the time you get your tasty bar of chocolate it has been processed so much that it barely resembles the quality or taste of the original food. Chocolate in it’s original state is an excellent source of magnesium and chromium which according to Nutrition Expert David "Avocado" Wolfe are the two main major mineral deficiencies right now in America…

And interestingly enough with the high rate of heart related deaths throughout the world and with so many people eating chocolate bars it kind of makes one wonder what happened to the goodies inherent in the original food. Our heart and brain thrive on magnesium which make chocolate great food for the soul. It is the most chemically complex food known with over 300 chemicals and contains significant sources of PEA (Phenylethylamine) and anandamide. The former also known as the love chemical and the latter taken from the sanskrit ananda, meaning bliss, and therefore known as the bliss chemical!

The cacao fruit can yield anything from twenty to fifty beans and is the highest source of antioxidants known to man according to ORAC (Oxygen Radical Advanced Capacity) ratings in the US. (If interested please refer to wikipedia for a definitions of ORAC and antioxidants)

My own experiences of eating chocolate tell me that it’s a great feel good food which is very stimulating and produces a mild euphoria. It lifts ones spirits and is also one of the best tasting foods. It’s also a natural appetite suppressant and laxative. By introducing raw cacao into your diet each day either in the form of a smoothie or as a snack you will be on your way to having the best day ever. Here are a few ideas for eating your chocolate raw:

Small Handful of the raw nibs and goji berries with some
raw honey or agave syrup.

Cacao Smoothie:-

Approx 300-400 ml of water
24 Almonds
3 Dates
2-4 tbsp of cacao nibs/powder
1-2 tbsp of coconut butter
Honey or Agave to sweeten
1 tsp of cinammon
1/2 tsp of nutmeg

The cacoa smoothie can become an exciting way of getting all your daily nutrients. Ingredients like Cashews, Cayenne, Berries, Cherries, Bee pollen, Aloe Vera, Camu Camu, Goji, Maca and Lucuma can all be added to create wonderfully nutritious and stimulating drinks that will have you thinking

You can even make shockingly good mochas. You can use herbal teas as a base for that extra nutritional component and play around with it to see what works for you. Best to keep it simple to begin with and then progress from there!

Lenette: How do you see this book (Superfoods: The Food and Medicine of the Future) impacting the planet, the countries that it’s going to be first available to?

david wolfe on how to get started on superfoods, longevity now, david wolfeDavid: I think it’s going to have a huge impact for Elements of Life, personally. Everybody is on the same page, in my opinion, especially in the western world, North America, Canada, the U.S. about where the future of nutrition is. What everyone is arriving at is that people want more of their nutrition from food, meaning their vitamins and minerals and protein, antioxidants, etc. They want it easier. They want it to be as easy as possible. Superfoods answer that question. It solves that completely. As soon as people get clicked on to it, they realize, "Whoa. This solves a bunch of problems," then it’s like an avalanche. That’s what I’ve been working on with Random House, who’s going to be helping me distribute this book; developing a strategy where we can kind of go out there and inform people like, "Hey, this is solving a big problem for everybody." If you don’t have to depend on vitamin and mineral supplements and be worried about getting enough in our food, you eat superfoods and that’s covered completely. You don’t have to worry about it anymore. And it really is. That’s really the truth.

Lenette: Back to the superfoods, how do you suggest people new to superfoods get started?

David: I think it’s best to use a form of food that we’ve all been aware of, which is the superfoods smoothie, or the super protein shake or the Slim-Fast ‘throw it in a blender’ kind of idea. That’s the easiest way I’ve found for most people to tap into this. We’ve all had some experience with that. All we did is we just took the junk protein, the whey protein, egg white protein, whatever that was, just get rid of that and throw superfoods in instead. We have a blender, we have some spring water, we have our favorite fruits, let’s say right now it’s berries, frozen blueberries or whatever kind of fruit you like. You throw in your superfoods in there. I’m a beekeeper so I have honey at my house, and we throw in honey. You blend that up and you go running out the door and it’s like it’s a whole new reality. Actually what that does to people, doing a superfoods smoothie every morning instead of their traditional protein shake, it changes their whole reality around. Suddenly all their neurotransmitters start firing properly. They’re actually getting real protein for the first time in their life. They’re getting tryptophan for the first time in their life. They’re actually getting a good quality and spectrum of real minerals that are 100% bioavailable. That’s never happened in our lives. We grew up on like Froot Loops so when we actually get real nutrition, especially when it’s liquified like that, it has the fastest effect on people’s health of anything I’ve ever seen. That’s why I’m such a fan of superfoods. That’s why I’m putting my whole thing behind that. I’ve seen that it works in sorting out people’s neurochemistry better than anything else.

Lenette: Some people say, "How do I know what’s going to work for me if I start taking a bunch of these things at once?" But you’re saying, "Just go for the gold. Just try it all out." [David laughing] Put it in a smoothie and you’ll feel better.

David: I remember one time I was hanging around with Shazzy. She’s very popular in the U.K. as a superfoodist; she and I wrote "Naked Chocolate" together. I remember we were having this hilarious moment together where we made up this superfood smoothie, and this was like six years ago. That was a long time ago, before it was like…I was kind of in my own reality with it, but I didn’t realize that people weren’t using this stuff. I made up this superfood smoothie; it must have had 50 ingredients in it. [both laughing] I’m tapping my foot, I’m drinking this drink, and I said, "Could you imagine if we just fed this to somebody on the street? It would probably knock them right out." And BOOM, there was Shazzy knocked right out on her back.

Lenette: No way.

David: She literally drank half a cup of it and had to lay down. It just laid her right down. The reason why, it was just too much. I just kind of threw her right into the middle of the Super Bowl and it was too much. You’ve got to start out simple. Take Spirulina. Try that.

Lenette: Was that like a detox reaction she was having? Or just overstimulation from all these minerals and things?

David: It was probably both because when you put that level of nutrition…it was like herbs…I remember putting Cat’s Claw powder in there and Camu Camu berry. I’m not kidding, there were probably 50 ingredients in there. When you get to that level of concentration, you have to work up to it, just like anything else. You don’t just suddenly switch from Cheetos and Burger King over to 50 different things in a superfood smoothie. Even as a raw foodist, you go slowly. Everything’s very slow. It’s better that way. You try an experiment. You try bee pollen. You try Goji berries. You just eat it or you throw one ingredient in your drink and gradually you complexify it as you build that muscle. Basically what we’re doing is we’re building up a different muscle, a new digestive muscle. Most of our lives we spend a huge amount of digestive energy digesting nothing. There’s nothing in there. Now we can flip the equation around where we spend hardly any amount of digestive energy and we get a huge amount of nutrients. We’ve got to adapt to that. It doesn’t just happen overnight. You readapt your body to new, higher quality, higher octave types of foods and your body will take its little time. Over a few months it will gradually come along for the ride and that’s more reasonable. This step-by-step approach is much healthier.

Lenette: Can any of the superfoods in the upcoming book cause a detox reaction when you first start using them? And how important are superfoods in a detox program?

David: That’s a very good question. Generally the way I answer that question is to say, "What is a detoxification?" A detoxification occurs when the energy content of what’s coming into the body is at a higher level than where the body’s natural homeostasis is, or residual homeostasis. When you start taking superfoods that are high energy into a body that was eating, say, Burger King, there’s an energetic and vibrational discrepancy. Eventually what happens is one of those higher frequencies is going to entrain the lower frequency vibrations. It’s going to bring the lower energy up and drive it out. And that is going to occur in a lot of people just from eating any of the superfoods because the power of these foods is so high. If you’re a little bit more sophisticated with your approach and you’ve done cleansing and juice fasting and done herbal cleansing and that kind of thing, then you start targeting specific superfoods, like Chlorella, that get heavy metals out. Then you can start looking at Camu Camu berry for its medicinal content and medicinal capability of breaking down neurological blockages. For example, cataracts in the eye, glaucoma, foggy thinking, that kind of stuff. Then you could start to dial in a little bit deeper. Bee pollen, for example is a tremendous…it drives out all the gunk in our nervous system due to the acetylcholine that’s present in bee pollen and in royal jelly. What does that do? We’ve all had genetically modified soy lecithin that somehow snuck itself into our body and that just gums up our brain. You need acetylcholine from bee pollen and royal jelly to help drive that out. It’s called chelation replacement. Kelp is another one. Kelp can detoxify the thyroid. That’s another great superfood, one of the superfoods of the sea.

Lenette: Where are you telling people is the best place to get these superfoods? There are low quality superfoods out there and there are the best ever superfoods out there. How did you address that in the book?

David: What I did was, I went through, and there was a whole section on each superfood about what to look for. It’s really good. It’s designed for anybody to suddenly have the skill to say, "Here’s what I’m looking for. I’ve got to make sure I have cacao nibs that don’t have little white splotches on them. If I buy cacao with the skin on, it shouldn’t have any black mold on the outside." Just little things like that. With each superfood, you become an expert on what to buy and how to determine what’s high quality and what’s low quality.

Lenette: That’s great, I’m really glad you put that in there. I’m curious to read that myself.

Raw food diet promotes a lifestyle of eating uncooked, unprocessed and sometimes an organic food as a large part of your diet. David Wolfe Shares Highlights of His New Book – Superfoods – Food …

superfoods: the food and medicine of the futureLenette: So, what was your biggest discovery in the research of your newest book, "Superfoods: The Food and Medicine of the Future"?

David: I think it has to do with phycocyanin, the blue pigment that’s in Spirulina and blue-green algae. The research that I stumbled across when I was researching that part of the book was completely mind-bending. Basically what the blue pigment does is ramp up all your stem cell production, so if you take something like blue-green algae or an extract of it like these phycocyanin products that are out there right now, even a few that are made out of Spirulina, and then you take something that’s really strong in building your immune system, like medicinal mushrooms, and you do that as a one-two punch, it’s really powerful how quickly you can ramp up your immune response. I think that was one of the things that I kind of stumbled across and then I was just playing with it, and it just became an awesome adjunct to what I am doing. It’s just amazing.

Lenette: Wow. So you’re combining the two now? When you’re taking one, you’re taking the other?

David:Right. Exactly. And the reason why is because phycocyanin, the blue pigments of algae, is the original pigment that was on the Earth a billion years ago or however many billion years ago algae were dominating the Earth. The Sun was actually putting out most of its energy in the blue spectrum instead of the green, and therefore the plants were blue. Algae was blue. There are still residues of those blue pigments. If you look into nature and you look closely, you’ll see it. When you take in those blue pigments, instead of having that effect of rebuilding your blood like chlorophyll does, this has an effect of rebuilding your stem cells or rejuvenating you. If you couple that with something like medicinal mushrooms, like Reishi mushroom and its ability to rebuild your immune system, you have this ejection of stem cell colonies out of the bone marrow, and those get turned into immune system weapon cells like N-K cells, T-fighter cells, macrophages. All those things can be formed out of the stem cells and it can cause a huge jump in your immunity. It’s really powerful.

Sounds like a little [science] discovery, right? I’m so into superfoods. It’s my genre, but I take for granted some of the simpler things like the power of marine phytoplankton and just what that is alone is totally ridiculous. We went off on a little tangent, but I could go off on a lot of things that came up from this book.

Lenette: Awesome. What chapter are you most proud of in the book?

David:Oh, that’s a good question. I’ll tell you what I really liked finding. I liked finding, in the Marine Phytoplankton chapter, there’s a whole section on how marine phytoplankton form sulfur, and then the sulfur gets evaporated up into the atmosphere and forms clouds. That’s how the marine phytoplankton protects itself in the summertime from being over-oxidized. That little section of that chapter was really, really interesting. Let me give you another analogy to that. As spring comes in, the trees will put leaves on to block the sun so that it doesn’t overheat the ground, it doesn’t burn the tree or the bark up. The way that algae does it in the ocean, or phytoplankton or microalgae, is it will actually release sulfur, secrete sulfur, into the ocean water and then that goes up and forms clouds that protect the algae in the middle of the summer to protect the algae from being hit by too much radiation. It’s a very interesting cycle, and that was all figured out in the last 50 years. It’s a closed cycle, meaning the stronger the radiation, the more sulfur the microalgae will release and the more that will protect the oceans from excessive sunlight or radiation. That is the basis of our entire weather system on the whole planet.

Lenette: Wow. In hearing the benefits and properties in marine phytoplankton, I have never heard sulphur. But it actually does have sulfur in it? So it’s good for hair, skin and nails?

David:Yes. Just like Spirulina and blue-green algae to a significant degree as well are really rich in sulphur. So is hemp seed. There’s another little trick in there. If you take something like MSM and you mix it with marine phytoplankton, there’s a very interesting synergy there. MSM, or sulfur, comes into existence in algae as a substance called DMS. It’s oxidized into a substance called DMSO and then evaporates off into the clouds.

Lenette: What is your longer definition of "superfoods" now and how has it really evolved for you in the past decade?

David:One of the things about superfoods is that they are plant-based so that they are controllable in terms of contamination. Animal foods; we don’t know what kind of water those animals are drinking. We have no idea what kind of conditions they’re in. I knock out things like salmon, or things that are thrown into the category of superfoods as superficial. We go to something that’s a plant. We go to something that is both a food and a medicine, so it has medicinal/herbal components. It also has food/caloric component. We also go to food that has 20 different tricks under its sleeve, not just two or three like a regular raw food would have. A good example of that is the Goji berry. Goji berry has its medicinal side which is like polysaccharide content of its sugars. Anywhere from 35-50% of the total sugar of the Goji berry is actually a very long-chain sugar that has very powerful immune system qualities. The other side of the Goji berry is it’s nutritive. It’s a complete protein source so it’s actually like fuel and it has good calorie value. If we go deeper, we find it’s a secretagogue. It helps to release Human Growth Hormone; it’s the only food to ever be shown to do that. It’s one of the highest antioxidant foods in the world. It contains substances which flip around the aging process, that help us produce more hormones, not just human growth hormones, but all hormones. It just goes on like that. We could continue to look at that. Spinach doesn’t have all that. Spinach is just like one thing, or broccoli. People say, "How come you don’t talk about broccoli?" and it’s like, "Where were you those 10 years I was talking about broccoli?"

Lenette: What are a few of the superfoods covered in your book that might be new even to people who already incorporate superfoods into their lifestyle?

David: Why don’t I just give a general list of them all? Some people are new to the information. Goji berry, Cacao-raw chocolate, maca, blue-green algae, Spirulina, marine phytoplankton, Chlorella, bee pollen, honey, propylis, royal jelly, yacon root products, Noni, Aloe vera, kelp, hemp seed, Acai, camu camu berry. That’s about it. A good rundown of some of the superfoods in that book that are covered pretty in-depth.

Lenette: There’s nothing in it coming from left field or right field. Those all seem pretty familiar to me. I know you’ve talked about a lot of those.

David: If you’re into live food and you’ve been paying attention to what’s going on, then it will fit right in to what you’ve been hearing about. There’s nothing completely out of left field in there.

Lenette: It seems like so many of these superfoods work synergistically with each other. Is there a way that you have laid it out, or is there an easy way for us to remember what to take with what else?

David: I kind of represent the antithesis of the food-combining theory. What I actually recommend is that you play around with the stuff with total fun and joy in your heart. Just play around with it the way you played around with food when you were a kid. Then you find out that you could just throw all this stuff into a smoothie into certain combinations that are right for you. For example, I’ll do Spirulina in the summer or if I’m in the tropics, but I don’t really do Spirulina when I’m in the temperate climates of the world. It’s more of a tropical algae. Blue-green algae, however, or marine phytoplankton are cold weather types of plants or superfoods. I would do those more in the northern climates. When you’re mixing together, I think some review of the climate of where you are, your altitude, the overall time of the season, plays a little bit of a factor in what you should mix together. Other than that, it’s kind of a free-for-all.

Lenette: Okay. Which chapter gave you the most trouble in gathering the research numbers for?

David:That’s a good question. Let me think about that. Probably Aloe vera. Surprisingly Aloe vera had some of the least amount of material out there that I was able to get access to. That really surprised me because with the popularity of Aloe out there and all the different uses that there are for this amazing superfood and how little information and how few books have been written about Aloe vera, that was shocking.

Lenette: It seems like it’s hard to get really solid numbers for raw foods and superfoods, even recommended daily allowance, whatever that even means. I remember hearing you at one of your lectures talk about you went and got your Goji berries tested by three different people trying to get the vitamin A percentage and they each came back with completely different numbers. And you were kind of over it.

David:And even Vitamin C. There is no Vitamin C in a dried Goji berry. Robert Young, of Young’s Living Essential Oils, had put out these statements that the Goji berry had all this Vitamin C in it and this and that. Then you come to find out later that actually that’s not true at all. So there is a lot of misinformation like that out there all over the internet. I feel like with this book "Superfoods" that I’ve kind of distilled and gotten rid of all those myths. Like it just makes it real clear what each food does, what’s in it, and it’s very well scientifically backed. In the back of the book there are all these scientific charts, for example what’s in a Goji berry, what’s the protein, what’s the breakdown of the carotenes, what’s the content of the antioxidants, all that stuff for every superfood.

Kevin: I’m excited about this talk today and let’s get right into it. Why don’t you tell us a little bit about, ah, how you started in this and your own personal story?

David: Well, I think I got oriented towards natural foods when I first came to California when I was seven years old. That was the first time I had ever eaten an orange or a tangerine off of a tree and that memory has continued to stay with me and it’s probably what got me started. I ended up growing up as kind of a San Diego, Southern California, Los Angeles surfer and pretty much was oriented, I think, genetically towards natural healing and health because both my parents are medical doctors and they met in medical school. In fact, I was conceived in a medical school library!

Kevin: Okay.

David: So in some strange way this is something that was probably preordained. I got deeply involved in natural diets when I went to college because I started buying my own food. I realized I was allergic to quite a few different foods. I had no idea that food allergies even existed before that, particularly dairy products. So I stopped eating dairy products and upon doing so I thought I’d better study this subject and began to research nutrition and read books on nutrition and inevitably that led me to what was really easy and simple, which was just eating an orange, eating an apple, eating natural foods. It’s the fastest food. Being a very busy person studying a lot in school at that time, going for three different degrees at once that just made the most sense to me, natural, original food, raw food. And eventually after a number of years I became a raw food eater, meaning that I would eat salads and I would eat fruit. I would eat nuts, and seeds, and eat seaweed and all kinds of things like this because it was — it took no preparation.

Kevin: Right.

David: And that’s — that’s led me into transforming what was a hobby of nutrition into a career because people would always ask me, well what are you eating? We want to know what you’re having. Can we have what you’re having? And eventually it led to a book, and several books, and lecture tours and a whole of fun in between.

Kevin: Sure. And a lot of people come to you for nutrition advice. What do you think is their mindset when they’re introduced to your philosophy on eating?

David: I think the general mindset out there is open. People really want to believe, with all the choices we have, and all the knowledge that’s available, people just want to know the simplest way to do the right thing. And that’s my job to connect people with simple foods that are great for weight loss that are fun to eat, that taste good, that are natural, that have the minimum amount of processing so that they can arrive at the end of their day and go, you know what? I did something good for myself, for my family, for the planet.

Kevin: What are three or four things that you can identify that you basically can tell just about everyone about weight loss, a key to weight loss or success in nutrition?

David: Well, I think the key to weight loss is you want to get more bang for your buck. You want more nutrition, less calories, more fiber. Well, what does that equate to? It just means eating more plants. It means eating more salad. It means eating more vegetables. It means eating more fruit. It means eating seaweed, and nuts, and seeds and things of this nature; and less of everything else. So my approach to eating really is really enticing because you get to eat things that taste good. It’s not dogmatic. It’s not a something where okay, you can’t eat this anymore. You have to eat this. It’s just simply eat replacing, because there’s only so much we can eat in a day, some of the other choices, for snacks, for example, with healthier choices, replacing, say, a big dinner meal with half of it being a salad. So, again, we’re getting more nutrition. We’re getting less calories and we’re getting more fiber and that provides us a satiated feeling but it begins to increase our metabolism so we start dropping that weight. I even go into specifics about foods that speed up metabolism, which is a very important thing for us right now. For example, kelp, powered kelp, it tastes like salt. You can sprinkle it on an avocado. You can sprinkle it on a salad. You can sprinkle it on a steak even. You can put it on anything.

Kevin: It comes from seaweed by the way just so…

David: Yeah, kelp is a seaweed and it’s probably the most important seaweed for us today with all the chemicals and toxins in our environment because it helps protect our immune system. In fact, in the 1930s it was found out that iodine, which is prominent in kelp seaweed, was the most powerful mineral for your immune system and wow, what an incredibly powerful piece of information. It also helps the thyroid and it helps speed up metabolism. So it helps us to lose weight quickly.

Another thing that’s really powerful in that is coconut and coconut products. So any kind of coconut products generally helps to speed metabolism, provides us with the right kinds of fat and oils and especially if those foods are raw. If that coconut is raw we get the right type of fat. Saturated fat is a critical part of being healthy. Even though we’ve heard so much propaganda to the contrary, most of the saturated fat we’ve heard about has come from, for example, animal products or something that’s a steak or something that has unsaturated fat that has been cooked. Now, once that saturated fat’s been cooked it then does become problematic but in it’s raw natural state, as the Polynesians discovered over thousands of years, there is no connection between heart disease and coconut because the saturated fat in coconut is almost always consumed in its raw natural state.

Kevin: Okay. Then why do we hear that coconut oil is bad for you?

David: Well, it fits into the issues of our day in terms of marketing of foods. And that is there’s very major interest out there. There’s the soy interest. There’s the corn interest, which feed the cattle industry, which feeds the dairy industry. And the soybean industry has a cheap raw product they can create, which is hydrogenated oil. They can take a soy oil that’s rancid and bubble hydrogen gas through it and turn it into something that looks like coconut oil and is extremely difficult for the body to deal with. It’s a Trans fatty acid. It’s a rancid fat. And they use propaganda against coconut and tropical oil products in order to drive them out of the U.S. market to be replaced by cheaper alternatives "soy products," hydrogenated oil products or hydrogenated corn oil products. And this is really something that in the last about ten years has finally reversed. People have finally realized oh, actually coconut is good for me and the Polynesians never had heart disease. In fact, it’s the hydrogenated oil that has been most connected to the whole syndrome of heart disease.

Kevin: Sure. And the coconut oil speeds up metabolism?

David: That’s exactly right. It’s an incredible weight loss food. In general, if we are able to eat on top of those two things, kelp and coconut oil, in general if we’re able to eat more vegetables we’re going to get more nutrition. We’re going to get less calories. We’re going to get more fiber. We can snack on that stuff all day, cucumbers, carrots, lettuce, things like that; right at our desk or whatever we’re doing and not have to worry about gaining weight. In fact, we’ll probably lose weight if we snack all day because we keep our digestive system active. We increase our metabolism and we can get things moving quicker due to all that fiber.

Kevin: What about some of the diets out there like the South Beach Diet? A lot of people come to me and they say protein, protein, protein, protein. Tell me a little bit about protein and what you have experienced with it.

David: Well, the best sources of protein are from plants because they’re A.) The cleanest sources. One of the problems we have today is the animal food industry cannot be trusted. If we want to do a little research on this we can even go back to Upton Sinclair’s incredible book written in 1930s about the meat industry back in the 1930s, how toxic it was; all the way up to John Robbins "Diet for A New America" and even the exposs that we find in "Fast Food Nation" and more recent writings. What we discover is that the fast food industry is an industry. It has lost the love. It has lost the compassion. It has lost the care for detail. These are things that I am intimately concerned with when it comes to food because, you know, we’re sensitive to subtle things in food. Everyone knows that mom’s home cooking tastes better. That’s just a fact. So if we have food that’s treated with love we know it tastes better. But if we have food that’s treated with unconsciousness, greed, the bottom line then that food cannot be nutritious. I don’t care how much protein it has. Too much protein is a major toxic issue to the kidneys.

It’s very problematic for heart conditions and generally becomes over time sluggish. So we have to be very careful that we get our protein from plant sources so we get real protein. For example, hemp protein; it’s a complete protein source. It contains the sulphur (sulfur) bearing amino acids, which create not just muscle but flexible muscle, which creates the neuro transmitters for proper brain chemistry. We can get our protein, for example, from spirulina, which is a super food that has been eaten, in say, Mexico for thousands of years and maybe unknown to our listeners but it’s something we want to explore if we really want to get the right kind of protein.

Kevin: Tell me a little bit more about spirulina.

David: Spirulina is a microscopic alga that grew in the biggest city of the world for thousands of years and even still today is Mexico City. Now, how in the world did they feed all those people in Mexico City? I mean when Cortez arrived in 1520 in Mexico City him and his men could not believe what they had seen. This was a city bigger than all the cities in Europe. It was a city that fed itself primarily on the protein source called pirulina, which is an algae. It’s a spiral algae. They grew it in the volcanic lakes and the highland planes in the Mexico City region and they would just dry it on rocks and sell it in the market and it turned out to be, when western analytical science got a hold of it, the highest protein content food in the world.

The Dangers Of High Fructose Corn Syrup (Refined Sugar)

The use of HFCS began to spread in the 1980s as food manufacturers sought a sweeter and cheaper alternative to sugar. High-fructose corn syrup extends the shelf life of foods thus making it a popular ingredient in a long list of products that includes: soda, salad dressing, ketchup, breakfast cereals, and many processed foods. Check for yourself. Read your food labels. You might be surprised by how many foods contain high-fructose corn syrup. These types of foods are high in calories and low in nutritional value.

High fructose corn syrups lurks in many popular products on your shelf besides just soda. Soups, candy, ice cream, and even energy drinks that are touted to be healthy all have this processed ingredient. Don’t be fooled! Read the labels on your food carefully before you put this sweetener that has been linked to both diabetes and obesity into your body.

According to the Mayo Clinic, HFCS is the leading ingredient after carbonated water in soda. Women who drink at least one regular soda a day are 85 percent more likely to develop type 2 diabetes than those who drink less. HFCS also leads to tooth decay. If you were to put a baby’s tooth in a glass of soda, it would dissolve completely.
High fructose corn syrup is disguised under the name "crystalline fructose" which is contained in Glaceau Vitamin Water and other energy drinks.

Research by the U. S. Department of Agriculture (USDA) reveals that high fructose diets shorten the life span of laboratory mice from the normal two years to a mere five weeks.

In my opinion, High Fructose Corn Syrup is one of the most destructive drugs in the world. It is more destructive than cocaine and alcohol. High fructose corn syrup is a button that gets constantly pushed in everybody who eats fast food, junk food, processed food, conventionally grown food. Chronic consumption of high fructose corn syrup has been known cause blood sugar disorders, mood swings, and hypoglycemia. It can also cascade into diabetes type II, anxiety, and other more severe mental disorders.

Quick Tips to Reduce High-Fructose Corn Syrup in your diet

Read food Labels. If the food contains high fructose corn syrup don’t buy it! Cut all foods with HF Corn Syrup from your diet. Use sweeteners that are healthier for you like Stevia, Yacon, Raw Unprocessed Honey, Xylitol (from birch), Agave Nectar.

Stop drinking soda!
If you are going to eat canned fruit, eat the kind that is canned in its own juices instead of heavy syrup.
Make your own organic juices instead of buying the processed kind. Fresh squeezed orange juice and apple juice are great-tasting and healthy! Experiment with delicious fruits such as mango, papaya, and durian to create exotic combinations that taste great, satisfy your cravings, and are chock-full of nutrition!
Excellent alternative sweeteners:
Yacon Root (powder and syrup):

A healthy, non-glycemic, natural, raw, organic, low-calorie sweetener, yacon syrup is fresh pressed from the yacon root, and has been enjoyed for centuries in the Andean highlands of Peru. Yacon is both naturally low-calorie and low in mono and disaccharides (containing less than 1 g per serving of the sugars that rapidly elevate blood sugar levels). Yacon is a distant relative of the sunflower with edible tubers and leaves. It is commonly grown and consumed from Colombia to northwest Argentina.

As a prebiotic, yacon is good for digestion, stimulates positive colon health, and helps with the absorption of calcium, magnesium, and other vitamins. Yacon helps to regulate friendly intestinal flora, and especially improves the growth of bifidobacterium, thus helping to reduce constipation. Because of its high antioxidant value, yacon is beneficial in reducing free-radical damage in the body, especially the colon.

Though packed with sweetness, the sugar in yacon is mainly fructooligosaccharide, which cannot be absorbed by the body. In fact, the root of yacon is considered the world’s richest natural source of FOS (Fruct 1ff8 ooliosaccharides). Most other roots and tubers store carbohydrates as starch – a polymer chain of glucose; yacon stores carbohydrate as FOS – a polymer chain composed mainly of fructose. This FOS can be considered a subgroup of inulin because it has a similar molecular structure, but with shorter fructose chains.Yacon roots contain important quantities of potassium and antioxidants.

Tests from the Universidad Nacional Mayor de San Marcos in Peru [July, 2004] tested how Yacon syrup affects blood glucose levels. Participants (60 non-diabetic men and women between the ages of 20 and 60) fasted for at least eight hours before ingesting varried sweeteners. Three groups were given different samples of Yacon, one group was given bee’s honey, another group was given maple’s syrup, and the last was given anhydrous glucose. The group ingesting Yacon syrup had the least blood sugar varriance as measured before and after. These results showed that Yacon had very little effect on glucose levels, while other sweeteners showed an immediate significant rise and a slow decline back to normal.

Yacon helps manage cholesterol and triglyceride levels within the body, as well as fat metabolism in general. Yacon also contains glyconutrients and helps boost the immune system in a similar way to aloe vera. Yacon is ideal for low-calorie, low-sugar, detoxification, and weight-loss diets.

How to use: Use it as you would honey, agave or maple syrup on foods, in recipes and to sweeten beverages with a spoonful. Yacon syrup has very little influence on the curve of glucose tolerance and is dramatically less glycemic than honey, agave or maple syrup.

Stevia:

A critical consideration in a healing diet is retaining a low sugar intake. This makes stevia one of the great herbs of the world because stevia is not a sugar at all! In fact, it contains no sugar whatsoever! It is a now widely-used sugar substitute originally from the Andes, South America that has a pseudo (false) sweetness. It is an excellent substitute for sugar, especially in the case of when someone is on a low/non-glycemic healing diet for a short period of time (as in reversing Candida). Sugar feeds the unwanted guests as well as the bacterial, virus-infected, and free-radical damaged cells. By cutting off their food supply, the condition can start to heal.

Stevia is available in both straight herb, concentrated liquid and powder form. There are many flavored stevias available that are delicious added to superfood smoothies, salad dressings, and deserts!

Agave:

Agave syrup is a natural product that tastes like a cross between honey and maple syrup, it dissolves easily and is the perfect sweetener to naturally enhance any food or beverage. To produce organic agave syrup, juice is pressed from the core of the agave plant. The juice is then selected to become dark agave syrup or is filtered to create a light agave syrup. The syrup is then heated (the temperature depends on the brand and quality), to hydrolyze the carbohydrates into sugars. There are over 100 species of Agave cactus in Mexico, Dark agave is produced from the more wild Salmiana species, as opposed to the Blue Agave variety which is used to make tequilla and amber agave nectars. Agave naturally contains Iron, Calcium, Potassium & Magnesium.

Dark agave has a relatively low glycemic index (even when compared to other agave products), meaning that it is metabolized more slowly into the bloodstream than other sweeteners and does not cause dramatic blood sugar spikes. This special quality makes it a valuable resource for diabetics, people with hypoglycemia, or anyone who is concerned with maintaining a consistent energy levels. It is also a valuable resource for all raw-food chefs and lovers of fine cuisine, as dark agave is delicious and brings subtle flavor and depth to any dish or drink. Agave also has unique hydrating properties. Ancient inhabitants of the Mexican region believed that it purified the body and soul. It is very smooth, mixes in easily with cacao nibs, any beverage or smoothie, and can be used to replace sugar in traditional recipes.

Blue Agave is higher in fructose-producing carbohydrates (85%) than other types of agave, and is considered to be the finest agave in the world.

When choosing agave products, check to make sure they are unprocessed, unfiltered and natural. This ensures that they retain valuable nutrients, minerals and enzymes that would otherwise be lost when cooked.

Xylitol:

Xylitol looks, tastes, and feels exactly like sugar; however, chemically speaking, xylitol is not actually a sugar, but a sugar alcohol. Unlike other sweeteners such as sorbitol, fructose and glucose, the xylitol molecule has five, instead of six, carbon atoms. As a five-carbon sugar, xylitol has anti-microbial properties, whereas six-carbon sugars can cause bacterial and fungal overgrowths.

Xylitol is naturally found in some fruits and vegetables, in addition to corn cobs and various trees, especially birch. In humans and animals, xylitol is also found as an intermediate byproduct of carbohydrate metabolism. Xylitol is actually so natural that our bodies constantly produce 5-15 grams per day, under normal metabolism conditions. The natural presence of xylitol in plants, food, and humans suggests that consuming xylitol (in reasonable quantities) is safe for our health. Commercially-obtainable xylitol is not a raw, whole-food product; however, xylitol itself is a natural substance.

Xylitol was discovered almost simultaneously by German and French chemists in the 1890’s. In the Soviet Union it has been used for decades as a sweetener for diabetics, and in China, xylitol has been used for various medical purposes. In 1983 the Joint Expert Committee on Food Additives (JEFCA) a joint expert committee of WHO and FAO, officially pronounced that xylitol is a safe sweetening additive.The FDA also agreed to this fact in 1986.

The Benefits of Eating a Plant-Based Diet – The Vitamin B12 …

I have been vegan for many years now, and have been forced, like many other vegetarians and vegans, to deal with the many falsehoods and myths surrounding plant-based diets. The first question I usually get is "But where do you get your protein?" The idea of a vegetarian not getting enough protein or having to combine proteins has been outdated for many years! Plant foods are incredibly high in amino acids, the building blocks of all proteins. Some plant foods, such as hemp seeds, are even complete proteins and contain the all essential amino acids needed by humans. The proteins found in meat and dairy products are often indigestible after being cooked and can sit inside of the intestines and putrefy. A diet too high in animal proteins can also prevent the absorption and assimilation of necessary vitamins and minerals, including Calcium (1). It seems paradoxical then, that we are led to believe that cow’s milk is a good source of calcium. This also explains why the countries with the highest levels of dairy consumption – the United States, Denmark, Norway, Holland and Sweden – also have the highest rates of osteoporosis, bone disease, heart disease, and breast cancer while in the countries with the lowest dairy consumption, rates of these diseases are much lower (1).

The next question I get from people is "What about vitamin B12?" I have to admit, when I first decided to be vegan, this one got to me a little. So I did some research into vitamin B12 deficiencies, and I was very surprised with what I found. On the surface, everything you find is about vegans and how if you don’t eat any animal products, you won’t get any B12. But if you look a little deeper (or happen to take a college level anatomy class) you learn a little more about B12, what it is, and where it actually comes from. "Many people say that the only foods which contain vitamin B12 are animal-derived foods. This also is untrue. No foods naturally contain vitamin B12 – neither animal or plant foods. Vitamin B12 is a microbe – a bacteria – it is produced by microorganisms," (2). So there you have it, you don’t have to eat animal products to get vitamin B12, only have good intestinal health, which unfortunately, most Americans are severely lacking. The bacteria that live inside of your intestines produce B12, which is then absorbed through your digestive tract. However, this cannot happen if your gastro-intestinal tract is not a conducive environment to the growth and spread of friendly flora (probiotics)… or if it is clogged with a thick, sludgy layer of undigested proteins from meat, dairy, and gluten-containing wheat products.

I still wondered how someone like myself, who was eating a very healthy diet of whole, unprocessed raw fruits and vegetables, could in some way be deficient in any vitamin when compared to a SAD (Standard American Diet) meat-eater guzzling french-fries, burgers, and soda. Then I came across this: "The author does not believe that a vitamin B12 deficiency is more widespread in vegans or vegetarians – this is probably just another marketing lie…In fact, contrary to meat and dairy industry propaganda, meat-eaters are known to be more likely to have a vitamin B12 deficiency – this has been known since 1959!" (3). Studies have shown that those on a SAD meat-eating diet actually require more B12 than those eating a plant-based diet (3). As vitamin B12 actually comes from a microbe living on the foods we eat that would be killed when a product is cooked/irradiated, then a person eating cooked meat and ultra pasteurized dairy products will actually be consuming very little to no B12, while a raw food vegan, consuming fresh, organic raw produce will inevitable be consuming higher amounts of B12. "Animal and dairy produce is a poor source of Vitamin B12 since they are normally cooked and therefore the vitamin is contained in nutrient-deranged foodstuffs which will inevitably destroy the usability of the vitamin," (2). A raw food vegan, vegan, or even a vegetarian will also have a much cleaner digestive tract than a SAD meat-eater, resulting in higher levels of probiotics residing in the intestines and increased B12 absorption and reabsorption.

It is also helpful to understand that "vitamin B12 can be destroyed by…highly acid conditions," (4). This means that the B12 in meat would be destroyed by the increased levels of hydrochloric acid needed in the stomach to digest meat products (4). That is, if the B12 microbes were not already killed by the several rounds of antibiotics given to animals in factory farms. Vegan and raw food vegans, especially, generally have a much more balanced alkaline internal environment than do SAD meat-eaters and vegetarians who consume dairy (both meat and dairy are highly acid forming).

So how can you ensure that your body is getting the Vitamin B12 it needs? Eat a plant-based diet rich in raw foods (at least 50%) to ensure proper digestion. "It has also been reported that vitamin B12 is present in wild fruits and wild and home-grown plant foods," (2). Raw food guru and author, David Wolfe, believes that the natural soil microbes and bacteria found on wild plant foods and unwashed garden plants are typically adequate to supply our B12 requirements (5). Also, avoid meat, dairy, and gluten containing products which create an acidic internal environment and effectively line the intestinal walls with a thick layer of mucus, preventing absorption of B12. Buy raw and organic to avoid foods that have been pasteurized, ultra-pasteurized, or irradiated. Include nutrient dense algae, such as Spirulina and Marine Phytoplankton, into your daily diet. Both are part plant, part microbe and may contain vitamin B12. Marine phytoplankton also happens to be the original source of omega 3-6-9, is sustainably harvested, and runs no risk of mercury contamination, unlike fish oil. I hope that this has cleared up some of the confusion regarding a popular vegetarian myth, that of B12 deficiency.
